Chef Gigi will also discuss the the cheese plate — or board as it’s sometimes called — is the perfect way to end a wonderful meal for cheese lovers around the globe. Did you know that there are over 1,300 different varieties of cheese – just in France? Entertaining can get overwhelming, and then there’s the systematic approach to actually building a cheese board— yes, there really is a method – who knew?
 
Creating a cheese plate that is balanced visually and in terms of flavors and textures is a skill that’s easy to learn and always useful. Duque will also offer tips for creating a cheese board with style according to the master himself, and just in time for the upcoming holiday season!

Smith’s legacy includes the developed the first iPhone app for wine pronunciation, and she is also the first person certified by the California State Bar Association for her seminar on the Valuation of Wine Collections. Culinary Institute of America trained chef, Smith has spent over a decade in some of the top kitchens in the United States as well as Japan, including stints at the famed French Laundry in Napa, as well as Terra, under chef Hiro Sone. Spending years roaming the country with her knife bag and an unbridled sense of adventure from a Relais & Chateaux dude ranch in Montana, to a hunting camp in Idaho, or charter yacht in Southeast Alaska, and pineapple seasons in Maui, she has finally settled down in the San Francisco Bay Area to pursue a career in wine and hospitality.

KSCU 103.3 FM - Sunday Supper, Food Talk Radio with Chef Gigi hosts established jet-setting northern California chef, Samantha Gordon on Sunday, September 8th, 2019 6-7 PM / PST Listen in while Gigi gets to the bottom of Chef Sami’s motivation to start her award-winning, specialty croissant business over a decade ago! Before establishing her company Croissami, Chef Sami spent the previous decade indulging her passion for food and travel by cooking for the rich and famous on high-end international yachts, setting sail around the world.
 
A graduate of Le Cordon Bleu, chef continued to hone her skills by working in restaurants, including the noteworthy Michelin starred restaurant, The Fat Duck in Bray, England, Heston Blumenthal’s notable temple to innovative modern cuisine and a forefather of Molecular Gastronomy. After spending many summers in the South of France yachting, chef Sami fell in love with the croissant though, grew tired of the everyday staple and the chocolate varieties, when unconventional sweet and savory fillings were accessible. Taking action, by leaving her jet setting life, the chef chose to settle on the beautiful shores of Sausalito and set up her dream business in the rolling hills of Northern California.
 
Lucky for us, Chef Sami went on to create a variety-favor based croissant delivery business to share the pure joy of all types of savory and sweet flavored croissants with others all over the world! What better place to nurture a small, artisanal food establishment than the San Francisco Bay Area. Chef Gigi’s Sunday Suppers, Food Talk Radio is raising the roof once again at KSCU 103.3 FM by celebrating the kick-off to my second season!

I will be in studio LIVE with the infamous Ed McGrath, Cider MerchantEd McGrath founded the Cider Merchant in 2011, offering professional consulting, education and brokerage services to cider businesses and breweries across the land!

McGrath is the mainline man for our county’s National Cider Association, and also works with Portland Cider Co. Lucky for me, he coming by to teach me a thing or two about this historical beverage!

All those interested in the art of fermentation, won’t want to miss this dynamic guest. The Cider Merchant walks me throughout history and we brainstorm new food pairings!

Hailing from the southeast region of Brazil, Chef Almir, an award winning executive chef consistently sprinkled with prestigious culinary accolades.He is a devoted culinary arts instructor at the prestigious Culinary Institute of America in Napa, California. Chef is also a national and international lecturer, and expert on the vast institution of gastronomy.

We will explore his latest compilation, his recently published book, “The Brazil Project”. Chef Almir’s life’s work, containing in depth research of his home city of Camops dos Goytacazes, in the state of Rio de Janerio, Brazil.

Chef Almir has his decades of study nicely wrapped up in 354 pages of impressive work. Chef Almir states his book is really in celebration of the great farmers, fishermen food producers of the world.

 Pasta, pasta... and more pasta! I want to explore the origin of pasta and speak to someone who actually quit her day job to give small business owner a try. Listen to my chit chat with founder of Semolina Artisanal Pasta  Leah Ferrazzani. Prior to starting Semolina, Leah worked as a food and wine writer in Los Angeles, California. She is now suppling her pasta to some of LA's hottest restraurants. I love pasta! Coming from a large Italian family, I pretty much cut my teeth growing up on it.

I’ve always wondered what it would be like to be an artisanal pasta maker!  Leah Ferrazzani the founder and owner of Semolina Pasta certainly did. Leah launched Semolina Artisanal Pasta in October 2014 out of her home kitchen, converting her laundry room into a makeshift pasta dryer using some consumer electronics and a lot of moxie. Now, Semolina pasta is sold all over the country and online for home cooks.

Prior to starting Semolina, Leah worked as a food and wine writer in Los Angeles, combining her experiences managing and working in the restaurants and wineries of some of the country’s most acclaimed chefs and winemakers which include Nancy Silverton at Pizzeria Mozza, David Lentz at the Hungry Cat, David Waltuck at New York’s Le Zinc and Pax Mahle at Pax Wine Cellars. Leah’s background in creative writing and journalism.

 As part of her small business  commitment, she also donates a portion of her pasta making profits to her local community organizations that focus on food justice, preservation and education.
